Simple Cauliflower Fried Rice

I’m always looking for new recipes and new things to try. I feel like I always have more luck with tasty dessert recipes than actual meals, and that’s not a habit I want to get into already only a year and a half into post-grad life! After a ton of Pinterest fails lately, I’ve been a little discouraged to put in all the effort of getting all the ingredients, spending time making something new and having it end up in the garbage. I’ve finally found my next recipe from Pinterest that turned out AMAZING. I couldn’t be more thrilled to have a tasty and simple cauliflower fried rice recipe.

This recipe was adapted from Iowa Girl Eats and took no time to create! All in all, I’d say if I were to make this again (without stopping to take pictures), it would take maybe 20-30 minutes tops. To be honest, I’m not sure that you’d be able to tell the difference from home made vegetable fried rice from this cauliflower version.

Some modifications I made to the recipe: She recommended using a food processor to break down the cauliflower, but I don’t have one at home, so instead I used a box grater per her advice. It was the perfect consistency and size. I also used a regular white onion instead of green onions. Lastly, I did not combine the soy sauce into the mixture. Instead, I’ll drizzle it on each serving as desired. I hope you enjoy my take on the recipe & a big thanks to Iowa Girl Eats for providing the recipe!

Cauliflower Fried Rice Recipe


– 1 tablespoon + 1 teaspoon of sesame oil

-2 eggs

-1 cauliflower

-1/2 cup frozen mixed vegetables

-1 yellow onion

-3 cloves garlic

-salt and pepper

-soy sauce (optional topping)

1. Whisk together eggs and 1 teaspoon sesame oil in a small bowl and set aside. Grate cauliflower using box grater (or food processor) until you have enough shredded cauliflower to fill 4 cups.

2. In a large skillet, heat 1 tablespoon of sesame oil and add cauliflower, onion and mixed vegetables. Cook until cauliflower is almost tender, about 5 minutes. Add garlic, salt and pepper and continue to cook for about a minute.

3. Make a volcano (push rice to the sides) to create space in the center of the pan. Pour egg mixture into this opening and scramble eggs. Mix together to combine & add soy sauce if desired.
